Just got back from Seattle trip and stayed at the Edgewater for one night and the Westin for two nights. Both are great hotels and were close to the same price. If I had to go back I would stay at the Westin. The Edgewater was in a nice spot on the water, but compared to the Westin, the room was small and cramped. The bathroom was interesting but not very private (translucent door that had an odd latch that woke everyone up when used). Also, since the Edgewater is at sea level, every trip out of the hotel (we walked most placed since parking is expensive in the city) involved a very steep walk to get up to the Pike Street Market or any of the good restarurants or coffee shops. The Westin is a typical high-end business hotel (where the Edgewater is cozy), but the Westin rooms have their "Heavenly" bedding & bath and were large, well appointed and very impressive.
